Pomegranate Vanilla Mousse Recipe

Pomegranate Vanilla Mousse

I had a pomegranate left over and wanted to try something different with it. While browsing for recipes, I came across this. I halved the recipe and used honey instead of sugar. It was a perfect dessert and tasted wonderful.

Ingredients:

1. Pomegranate -1
2. Agar-Agar - 1tbsp (chopped)
3. Water- 1/2 cup
4. Milk- 1 cup
5. Vanilla extract - 1/4 tsp
6. Honey - 3 tbsp

Method:

1. Remove the arils from the pomegranates and blend them and strain the juice. I got about 3/4 cup juice.

2. Soak agar-agar in water for 5 mins and then heat the mixture.
3. Stir continuously and let it boil first and then simmer for 10-12 mins till agar-agar dissolves completely. Now the water will have a gelatinous texture.

4. Then add milk, juice, vanilla, honey and give a nice stir.

5. Heat this till it warms up (dont let boil) and pour into glasses and cool it at room temperature.
6. Refrigerate till the mousse sets completely. Mine took 3 hours. Serve chilled.

Notes:

1. You can use cashew milk/almond milk also as given in the original recipe. You can use sugar also.
2. Let the mousse set completely before you take it out from the fridge.
3. I got nearly 3 glasses from this recipe.
