Pudina (Mint) Thogayal Recipe

Pudina (Mint) Thogayal


This is my MIL's way of making mint thogayal. Its very tasty and is one of my husband's fav.


Ingredients:


1. Mint leaves - 1 large bunch
2. Urad dal - 1 and a 1/2 tbsp
3. Tamarind - small piece
4. Green chillies - 4
5. Gingelly oil - 5tbsp +1tbsp
6. Curry leaves and coriander (optional)
7. Salt -  as needed

Method:

1. In a kadai, heat 1tbsp of oil and saute the urad dal till slight brown.
2. Clean and wash the pudina leaves and saute them also. You can also add any curry leaves or coriander if you have.
3. Add green chillies and tamarind and saute them till the pudina shrinks in volume.




4. Cool and grind this to a smooth paste in mixie with little water along with salt.
5. Now heat kadai again and add the 5tbsp of oil and put the paste and saute it.




6. At one point you will notice that the paste turns dark green in color. Switch off at this point.

Notes:

1. This stays well for 4 to 5 days in fridge. According to my mother in law it keeps good if more oil is added. So you can increase the oil and also the spice level. Its your choice.
2. It goes well with dosa, idli, chapathi.
3. Adding curry leaves and coriander is purely your choice.
